Make soft and chewy red velvet cookies fast using only boxed cake mix, eggs, and butter. This simple recipe is perfect for a quick dessert or holiday treat.

  • 1 box (15.25 ounces) red velvet cake mix
  • 2 large eggs
  • 1/2 cup unsalted butter, melted
  • 1 cup white chocolate chips (optional)
  • 1/2 cup powdered sugar for rolling (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, combine the red velvet cake mix, eggs, and melted butter. Mix until just combined into a thick dough. Do not overmix.
  3. If using, fold in the white chocolate chips.
  4. If making crinkle cookies, place the powdered sugar in a shallow dish.
  5. Scoop the dough into rounded tablespoons. If using powdered sugar, roll each dough ball completely in the sugar until coated.
  6. Place the dough balls about 2 inches apart on the prepared baking sheets.
  7. Bake for 8 to 10 minutes. The edges should be set, but the centers will look slightly underdone for a soft texture.
  8. Let the cookies cool on the baking sheet for 5 minutes before moving them to a wire rack to cool completely.

Notes

  • For softer cookies, slightly underbake them. They firm up as they cool.
  • Chilling the dough for 15 minutes before rolling helps prevent spreading if your kitchen is warm.
  • For a richer flavor, substitute the butter with 1/2 cup of melted coconut oil.
