  • 4 slices sourdough bread
  • 1 cup whole milk ricotta cheese
  • 2 tablespoons honey, plus extra for drizzling
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1 cup mixed fresh berries (strawberries, blueberries)
  • 2 tablespoons chopped pistachios (optional)

Instructions

  1. Toast the bread slices until they are golden brown and crisp.
  2. In a medium bowl, combine the ricotta cheese, 2 tablespoons of honey, vanilla extract, and salt.
  3. Use a hand mixer or a whisk to whip the ricotta mixture until it is light and fluffy, about 2 to 3 minutes.
  4. Spread a generous layer of the whipped ricotta mixture evenly over each slice of warm toast.
  5. Top the ricotta with the fresh mixed berries.
  6. Drizzle extra honey over the berries and toast.
