You get crispy roasted sweet potatoes with a savory garlic and Parmesan crust. This easy side dish works well for weeknight dinners or holiday meals.

  • 2 large sweet potatoes, scrubbed and cubed
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Line a large baking sheet with parchment paper for easy cleanup.
  2. In a large bowl, toss the cubed sweet potatoes with olive oil, garlic powder, dried thyme, salt, and pepper until they are evenly coated.
  3. Spread the seasoned sweet potatoes in a single layer on the prepared baking sheet. Do not overcrowd the pan; use two sheets if necessary for crispier results.
  4. Roast for 20 minutes.
  5. Remove the pan from the oven and sprinkle the Parmesan cheese evenly over the sweet potatoes. Gently toss them to coat.
  6. Return the pan to the oven and roast for another 5 to 10 minutes, or until the sweet potatoes are tender inside and the cheese is golden and slightly crispy.
  7. Serve immediately as a healthy side dish or part of your meal prep for the week.

  • For extra crispy sweet potato cubes, ensure the potatoes are in a single layer on the baking sheet.
