Make restaurant-style shrimp quesadillas fast. This recipe delivers tender, seasoned shrimp, melted cheese, and perfectly crisp tortillas for a satisfying weeknight dinner or quick lunch.

  • 1 tablespoon olive oil
  • 1 pound raw shrimp, peeled and deveined, chopped into small pieces
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • Salt and black pepper to taste
  • 1/2 cup finely chopped onion
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded sharp cheddar cheese
  • 8 medium flour tortillas (8-inch)
  • 1 tablespoon butter or cooking spray

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped shrimp, chili powder, cumin, garlic powder, salt, and pepper. Cook for 3 to 4 minutes until the shrimp is pink and cooked through. Remove shrimp from the skillet and set aside.
  2. Add the chopped onion to the same skillet and cook until softened, about 3 minutes. Return the cooked shrimp to the skillet.
  3. Mix the Monterey Jack and cheddar cheeses together in a small bowl.
  4. Place one tortilla in the skillet over medium-low heat. Sprinkle one-fourth of the cheese mixture over one half of the tortilla. Top the cheese with one-fourth of the shrimp mixture.
  5. Fold the empty half of the tortilla over the filling. Cook for 2 to 3 minutes until the bottom is golden brown.
  6. Flip the quesadilla carefully. Cook the second side for 2 to 3 minutes until golden brown and the cheese is completely melted.
  7. Remove the quesadilla from the pan. Wipe the pan clean if needed, add a small amount of butter or spray, and repeat the process with the remaining tortillas and filling.
  8. Cut each quesadilla into wedges before serving.

Notes

  • For extra flavor, add 1/4 cup of finely diced bell pepper when cooking the onions.
  • Use a heavy-bottomed skillet to help achieve a crisp, evenly browned tortilla.
  • Serve with your favorite toppings like salsa, sour cream, or guacamole for a complete meal.
