1 pound ground beef (80/20 blend recommended)
4 hamburger buns
1 tablespoon neutral oil
Salt and black pepper to taste
For the Special Sauce:
1/2 cup mayonnaise
2 tablespoons ketchup
1 tablespoon yellow mustard
1 teaspoon pickle relish
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1 slice American cheese per burger (optional)
Instructions
Prepare the special sauce: In a small bowl, combine the mayonnaise, ketchup, mustard, pickle relish, smoked paprika, garlic powder, and onion powder. Mix well until smooth. Set aside.
Divide the ground beef into 8 equal portions (about 2 ounces each). Do not form into patties yet.
Heat a large cast-iron skillet or griddle over medium-high heat. Add the oil.
Place two portions of beef onto the hot surface, leaving space between them. Immediately place a piece of parchment paper over each portion.
Using a sturdy, flat spatula or a burger press, firmly press down on the beef through the parchment paper until the patties are very thin (smash them flat). This creates the crispy burger patties.
Season the smashed patties generously with salt and pepper.
Cook for 2 minutes without moving them to develop a deep brown crust.
Flip the patties. If using cheese, place one slice on top of each patty immediately after flipping. Cook for another 1 to 2 minutes until the cheese is melted and the burger is cooked through.
While the burgers cook, lightly toast the cut sides of your hamburger buns on the griddle until golden brown.
To assemble, spread a generous amount of special sauce on both halves of each toasted bun.
Place two cheesy smash patties on the bottom bun. Top with the other bun half. Serve immediately for an indulgent dinner idea.
Notes
For the best smash, use a very hot cooking surface.
If you prefer a diner style burger without cheese, skip that step.
This recipe works well for making a large batch of homemade burger sauce ahead of time.
