Make these elegant stuffed dates appetizer bites that perfectly balance sweet and savory flavors. They are quick to assemble, look impressive for parties, and feature creamy goat cheese, crispy bacon, and a sweet honey finish.

Ingredients

Scale
  • 20 Medjool dates, pitted
  • 4 ounces soft goat cheese (chèvre)
  • 10 slices bacon, cut in half crosswise
  • 1 tablespoon honey
  • 1 tablespoon chopped pecans or walnuts (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Take each pitted date and gently stuff the cavity with about one teaspoon of soft goat cheese.
  3. Wrap one half-slice of bacon tightly around each stuffed date. Secure the bacon with a toothpick if necessary.
  4. Place the bacon-wrapped dates on the prepared baking sheet.
  5. Bake for 15 to 20 minutes, or until the bacon is crisp and the dates are slightly caramelized.
  6. Remove from the oven and let cool for a few minutes.
  7. Arrange the warm stuffed dates on a serving platter. Drizzle lightly with honey and sprinkle with chopped nuts, if using.
  8. Serve warm as an easy party snack or elegant finger food.

Notes

  • You can prepare the stuffed dates (steps 1 through 4) up to 24 hours in advance. Keep them covered in the refrigerator until ready to bake.
  • For an extra layer of flavor, mix a pinch of black pepper or a tiny dash of cayenne into the goat cheese before stuffing.
  • If you prefer a less sweet finish, skip the honey drizzle and garnish with fresh rosemary instead.
