Easy Make-Ahead Tater Tot Breakfast Casserole

Prepare this hearty, cheesy tater tot casserole the night before for a simple, crowd-pleasing breakfast bake. It features sausage, eggs, and a crispy potato topping.

Ingredients

  • 1 pound breakfast sausage or bacon, cooked and crumbled
  • 1 (30 ounce) bag frozen tater tots
  • 1 cup shredded cheddar cheese, divided
  • 1 cup shredded Monterey Jack cheese
  • 12 large eggs
  • 1 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Cook the sausage or bacon until done. Drain excess grease and set aside.
  2. Grease a 9×13 inch baking dish.
  3. Arrange half of the frozen tater tots in a single layer on the bottom of the prepared dish.
  4. Sprinkle half of the cooked sausage/bacon and half of the shredded cheddar and Monterey Jack cheese over the tots.
  5. Layer the remaining tater tots over the cheese layer. Top with the remaining sausage/bacon.
  6. In a large bowl, whisk together the eggs, milk, salt, and pepper. Pour this egg mixture evenly over the casserole layers.
  7. Cover the dish tightly with plastic wrap or foil. Refrigerate for at least 4 hours, or preferably overnight.
  8. When ready to bake, preheat your oven to 375 degrees Fahrenheit. Remove the plastic wrap.
  9. Bake covered for 30 minutes.
  10. Remove the foil and sprinkle the remaining half of the cheddar and Monterey Jack cheese over the top.
  11. Bake uncovered for another 15 to 20 minutes, or until the eggs are set and the tater tots on top are golden brown and crisp.
  12. Let the casserole rest for 5 minutes before slicing and serving.

Notes

  • For a make ahead breakfast casserole, assemble completely through step 5, cover, and refrigerate up to 24 hours. Add 5-10 minutes to the initial covered baking time if baking straight from the refrigerator.
  • You can substitute bacon for sausage or use a mix of both.
  • This recipe is freezer friendly; freeze assembled (unbaked) casserole tightly wrapped for up to 3 months. Thaw overnight in the refrigerator before baking.
