1 tablespoon olive oil
1 medium yellow onion, chopped
1 pound ground beef (80/20 recommended)
1 teaspoon garlic powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 (15 ounce) can tomato sauce
1/4 cup ketchup
2 tablespoons brown sugar
1 tablespoon Worcestershire sauce
1 tablespoon yellow mustard
1 teaspoon chili powder
8 slices Texas Toast (frozen or fresh)
4 slices cheddar cheese or American cheese
Butter or mayonnaise for toasting bread
Instructions
Heat olive oil in a large skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.
Add the ground beef to the skillet. Break it up with a spoon and cook until browned. Drain off any excess grease.
Stir in the garlic powder, salt, and pepper. Cook for 1 minute.
Add the tomato sauce, ketchup, brown sugar, Worcestershire sauce, mustard, and chili powder to the skillet. Stir well to combine.
Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 15 minutes, stirring occasionally, allowing the flavors to blend.
While the meat simmers, prepare the Texas toast. Spread a thin layer of butter or mayonnaise on one side of each slice of Texas toast.
Heat a large griddle or clean skillet over medium heat. Place the toast, buttered-side down, on the griddle. Toast until golden brown and crisp, about 2 to 3 minutes per side.
Place one slice of cheese on top of four of the toasted slices. Cover the skillet briefly to allow the cheese to melt slightly.
Spoon a generous amount of the sloppy joe mixture onto the four slices of toast topped with cheese. Top with the remaining four slices of toast.
Serve immediately.
Notes
For an extra savory flavor, use garlic butter on the Texas toast instead of plain butter or mayonnaise.
If you like a little heat, add 1/4 teaspoon of crushed red pepper flakes with the other seasonings.
