  • 2 cups fresh seedless watermelon, cubed
  • 10 fresh mint leaves, plus extra for garnish
  • 1 whole lime, cut into wedges
  • 2 tablespoons granulated sugar or simple syrup (adjust to taste)
  • 4 ounces white rum (optional, for alcoholic version)
  • Club soda or sparkling water, to top
  • Ice cubes

Instructions

  1. Place the watermelon cubes, mint leaves, and lime wedges into a sturdy highball glass or cocktail shaker.
  2. Add the sugar or simple syrup.
  3. Gently muddle the ingredients. Press down on the mint leaves just enough to release their oils; do not shred them. Muddle the watermelon until it releases its juice.
  4. If making the alcoholic version, add the white rum now. Stir the mixture briefly.
  5. Fill the glass completely with ice cubes.
  6. Top the mixture with club soda or sparkling water. Stir gently from bottom to top to combine without losing carbonation.
  7. Taste and adjust sweetness if needed. Garnish with a fresh mint sprig and a small watermelon wedge.

  • For a virgin watermelon mojito, simply omit the rum and increase the club soda slightly.
