Make classic, nostalgic Lunch Lady Peanut Butter Bars with this simple, no-bake recipe featuring a peanut butter graham cracker base and a rich chocolate topping.

  • 1 cup unsalted butter, softened
  • 2 cups powdered sugar
  • 1 cup creamy peanut butter
  • 1 1/2 cups graham cracker crumbs
  • 1 cup all-purpose flour
  • 1/4 teaspoon salt
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter (for topping)

Instructions

  1. Line a 9×13 inch baking pan with parchment paper, leaving an overhang for easy lifting.
  2. In a large bowl, beat the softened butter and powdered sugar together until smooth.
  3. Add 1 cup of peanut butter, graham cracker crumbs, flour, and salt to the butter mixture. Mix on low speed until just combined. The mixture will be thick.
  4. Press the base mixture evenly into the bottom of the prepared pan.
  5. In a microwave-safe bowl, combine the chocolate chips and the remaining 1/2 cup of peanut butter. Microwave in 30-second intervals, stirring well after each, until the mixture is smooth and fully melted.
  6. Pour the chocolate mixture over the peanut butter base and spread it evenly to cover the entire surface.
  7. Refrigerate the bars for at least 2 hours, or until the chocolate topping is firm.
  8. Use the parchment paper overhang to lift the bars from the pan. Cut into squares before serving.

Notes

  • For cleaner cuts, run your knife under hot water and wipe it dry between slices.
  • Store leftovers in an airtight container in the refrigerator for up to one week.
  • You can substitute crushed vanilla wafers for graham cracker crumbs if desired.
